Our reverse offset Smoker with a firebox on the side is an amazing piece of equipment, which our chef carefully controls to maximise flavour. Heat and smoke are generated in the firebox which then passes through the cooking chamber to infuse speciality artisan products.
Chef Shan Walton is a fire starter and Master Smoker, carefully managing the temperature, cooking low and slow,
whilst infusing the food with smoke and moisture to slowly build a unique and complex flavour profile for the food.
This method of barbequing ensures that moisture evaporates less quickly, allowing the meat to retain its succulence.
