Our reverse offset Smoker has a firebox on the side 

of the smoking chamber . Heat and smoke are generated in the firebox which then pass through the cooking chamber 

 

Chef  Egon is the fire starter and Master Smoker , carefully managing the temperature and cooking low and slow , 

to infuse the food with smoke and moisture to slowly build a  unique  and complex flavour profile over the food.

This method of barbequing  ensures that moisture evaporates less quickly , allowing the meat to retain its succulence . 

 

Our Sommelier has chosen wines for this special menu based on these principles. Selecting wines from regions where the grapes ripen more slowly , adding to their complexity and depth .
